Pickled Eggs

This is from my grandfather.

  • 12 large hard boiled eggs (peeled)
  • 2(15 ounce) can sliced beets with liquid
  • 1 cup white vinegar
  • 1/4 cup white sugar
  • 1/2 cup water
  • Salt to taste, I used approx 1 tbsp
  • 2 Apples quartered
  • 1 large red onion quartered

Add the vinegar, sugar and water to a pot and heat until the sugar and salt dissolves. Remove from heat and let cool completely. Add eggs, apples, onion, beets with the liquid and the vinegar solution to a large glass jar. The eggs should be fully submerged. If not, you can add additional beets w/ liquid/vinegar/water.

Let sit in the fridge for at least 4-5 days, better after 2 weeks.
