Infused Hard Candy

This is fairly easy. I used this for lollipops and happy campers (fun jolly ranchers)

  • Cooking spray
  • 1 cup infused sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 1/2 teaspoons extract of choice, such as vanilla, mint, cinnamon
  • Food coloring, optional
  • Candy Thermometer

Have everything measured out and if needed, spray the mold before you start. I use silicon molds and they do not need to be sprayed.
Add sugar, corn syrup and water to a pan over medium-high heat. Stir until the sugar dissolves. When the mixture starts to boil, put in the candy thermometer and STOP STIRRING. You are looking for 300 degrees.
Remove the saucepan from heat. Allow it to sit until it stops bubbling completely. Stir in the extract of your choice and, if desired, food coloring. Spoon the mixture into the mold quickly. Let sit on the counter until hard and cool, 10-15 minutes.
